I come from a background and family where nutritional self-efficacy - the knowledge and confidence to execute healthy and delicious meals - was just not part of our cultural context. This is the case for millions of people around the world.
Studying nutrition in college completely re-routed my life. I always loved to cook, but this was when I started to hone in on how I can implement nutrition science into my favorite dishes while maintaining the culture and flavor of each dish.
One of the worst things I see is people believing they have to sacrifice flavor for nutrition. For many people this is just as soul-crushing as it is false. Because if you're like me, not eating my favorite foods is simply not an option.
